John's Cuban Black Beans

INGREDIENTS

  • 2 tbsp. extra virgin olive oil, Tuscan, unrefined
  • 1 fresh yellow onion
  • 4 fresh garlic cloves
  • 2 tsp. Kosher salt, coarse
  • 1 tsp. ground black pepper
  • 1 tbsp. ground cumin seeds
  • 1/2 tsp. ground coriander seed
  • 16 oz. canned black beans
  • 1/4 cup Natural Goodness chicken broth
  • 2 tbsp. canned, diced jalapeño peppers
  • 1 tsp. hot sauce
  • 1 cup fresh lime juice
  • 1 tsp. balsamic vinegar

DIRECTIONS

Heat olive oil over med-high heat in a saucepan and sauté onions until translucent.

Add garlic, salt, pepper, cumin and coriander and sauté another minute until garlic is fragrant.

Reduce heat to med-low and add beans, chicken broth, jalapeños, hot sauce, lime juice, and vinegar.

Simmer for 15 minutes to incorporate flavors then serve over rice.
