Quick Broccoli and Edamame Side Dish with Sweet and Savory Dressing

INGREDIENTS

  • 1 lb. broccoli florets
  • 1/2 cup edamame beans
  • 1 cup carrots, julienned
  • 6 tbsp. rice vinegar
  • 2 tbsp. orange marmalade
  • 1/2 tsp. fresh garlic, chopped
  • 1/2 tsp. country style mustard

DIRECTIONS

Follow the prep technique next to each ingredient.

In a small saucepan combine the vinegar, marmalade, garlic and mustard. Simmer until all flavors are well combined.

Place the broccoli and edamame in a steam basket and cook 2-3 minutes.

Remove from heat and combine with the shredded carrots, folding in the orange marmalade-mustard mixture.
