INGREDIENTS
- 2 tbsp. extra virgin olive oil, Tuscan, unrefined
- 1 fresh yellow onion
- 4 fresh garlic cloves
- 2 tsp. Kosher salt, coarse
- 1 tsp. ground black pepper
- 1 tbsp. ground cumin seeds
- 1/2 tsp. ground coriander seed
- 16 oz. canned black beans
- 1/4 cup Natural Goodness chicken broth
- 2 tbsp. canned, diced jalapeño peppers
- 1 tsp. hot sauce
- 1 cup fresh lime juice
- 1 tsp. balsamic vinegar
DIRECTIONS
Heat olive oil over med-high heat in a saucepan and sauté onions until translucent.
Add garlic, salt, pepper, cumin and coriander and sauté another minute until garlic is fragrant.
Reduce heat to med-low and add beans, chicken broth, jalapeños, hot sauce, lime juice, and vinegar.
Simmer for 15 minutes to incorporate flavors then serve over rice.
